“Fat-washing is a cocktail clarification method that leads to savory cocktails without the mess. To fat-wash your cocktail, add a liquid like bacon fat or melted butter to a spirit at room temperature. Let it sit until it gets the flavor you’re looking for. Throw in the freezer and chill until the fat solidifies and can be skimmed off. The spirit retains the fatty flavor without making a mess in your drink.”

2 ounces Old Forester 100-Proof Bourbon (Fat-Washed)
1/2 ounce maple-ginger syrup
2 dashes of Angostura bitters
1 dash of cranberry bitters

To make the cocktail

Mix all ingredients and garnish. Express an orange peel over the drink to release the oils, and then rub oils on the rim of the glass. Skewer the orange peel along with some fresh cranberries.
