We can't predict the future, but we'll bet you a Don Mojito that it's going to be blazin' hot this summer. We like drinks that look fun, taste incredible and will make a guest feel like a VIP without taking your summer budget overboard. With the help of Liz Oliver, a mixologist at Bar61, we turn down the heat with some fun recipes for you to try.
BAR61 MIXOLOGIST

LA LUNA
INGREDIENTS
1.5 oz grapefruit gin
1 oz purple corn drink
1/2 oz Velvet Falernum
1 oz fresh lemon juice
1 dash of lavender bitters
2-3 dashes of Fee Foam
1/4 oz Simple Syrup
DIRECTIONS
1. Fill a cocktail shaker with ice and add all ingredients to shaker.
2. Shake vigorously for at least 15 seconds, pour slowly into a martini glass.
DON MOJITO
INGREDIENTS
Juice from one fresh lime
1/2 cup guava puree
2 oz cane rum
3/4 oz simple syrup
12 mint leaves
DIRECTIONS
1. Add mint leaves to the bottom of a cocktail glass, fill 3/4 of the glass with ice.
2. In a cocktail shaker add lime juice, guava puree, cane rum and simple syrup.
3. Shake until combined then pour over prepared glass.
SPICY
MARGARITA
INGREDIENTS
2 jalapeño coins, seeds removed
2 ounces blanco tequila
1/2 ounce orange liqueur
1 ounce lime juice, freshly squeezed
1/2 ounce agave syrup
Garnish: Tajin & chamoy
Garnish: jalapeño coin
DIRECTIONS
1. Rub the rim of a rocks glass with chamoy, dip the rim in Tajin to coat, and set aside.
2. Add the jalapeño coins to a shaker and gently muddle.
3. Add the blanco tequila, orange liqueur, lime juice, and agave syrup, plus ice, and shake until well-chilled.
4. Strain into the prepared glass over fresh ice.
5. Garnish with a jalapeño coin.
WHITE
RUSSIAN
INGREDIENTS
2 oz vodka
1 oz coffee liqueur
1 oz heavy cream
DIRECTIONS
1. To a glass with ice, add the vodka and coffee liqueur.
2. Pour in the heavy cream and very gently stir to create a swirl effect.
